Help on two-handed weapons gameplay

I like to play on master difficult to really feel that i'm mastering the game ^^ I did well with mage and archer, but i'm having problems with my two-handed character.

I've seen a few posts about playing without block at all, i cant immagine a thing like that, cause i use block a lot, so could you explain to me how you do it (i dont like smithing or enchanting, if no block means going smithing/enchanting)? Sometimes i try bashing to do a power strike after, but i miss the hit a lot, or sometimes it just doent work.

Another question, i read a tutorial about the weapons, and it pointed that warhammer is not very good against dragons and animals, is that true?

I couldn't imagine playing 2H without block and QR. It changes 2H weapon use from merely trading hits with your enemy to something a bit more tactical, not to mention it saves a ton on healing potions.

You block, the enemy goes for a power attack, time slows, you bash and stagger, then swoop in for an unblocked power attack. You use no potions.

You don't block, the enemy wallops you hard with their power attack, possibly staggers you, and now you're scrambling for potions instead of looting their corpse.

Blocking is one of the biggest "perks" available to two-handed weapons (second to the massive damage output). If you're not going to block, you might as well just dual wield one-handers.

With two-handers, blocking is your primary means of defense and your armor (light or heavy) is secondary.

The only way I can picture playing a two-hander without blocking is by simply moving around at all times, sprinting past them and whirling back around to strike - just don't get caught by a power attack from some higher-level two-hander wielding bandit or you'll be the endpoint for some nice finishing move caught in slow motion.

If you back up slowly while fighting, the only things that can hit you while two-handing is another two-hander, which is usually telegraphed cause the NPCs spam their power attacks. Allowing you to exploit what range mechanics there are in melee, or simply sidestep to avoid any attacks.
