Just make sure you hide the ENTIRE body. I was fighting Mercenaries in the Golden Glow Estate and got a head chopping animation on one. Hid the bodies in a storage closet and hid myself when others came to investigate. Forgot to move the one guy's head though so they got on to me.

After I completed the mission I left the severed head on a carpet by the entry.

Nice!! I was in a cove, was double crossed by some bandits. I slaughtered everyone, then threw their bodies in the water.

There's actually a quest with an optional secondary part that gives you a bonus reward if you hide the body.
