I svck at being a horse owner. Whether it's them dying from charging mindlessly into a fight or just plain losing them when they run off during a fight.

Anyway, I went to a stable where I got my first horse and tried to buy a new one. The guy took my money and then said "it's the one with the saddle." Well, there wasn't one with a saddle.

I'm guessing it was a bug and to make a long story short, I was just wondering how long it's going to take for that stable to get a buyable horse.

Either 72 hours or 31 days.

Try a different stable or wait, preferably in another cell and come back.

Which stable did you buy the horse at? I had the same problem with the stable outside of Solitude. They would take my money and tell me to take the one with the saddle, only there wasn't one. Afterwards I noticed a Solitude horse (the yellowish one) at the Riften stable. This horse belonged to my character, when I want to buy that color horse I have to pay at the Solitude stable then fast travel to Rifted to get my horse.

My Solitude stables glitched too, they'd gladly take my money and sell me a non-existant horse, I eventually put another mark in the glitch tally and went to another stable, which svcks because the Solitude horses looked good on my Altmer
