On the PC there's a mod that makes horses essential so that they can't be killed. Unfortunately you don't have this option on the xbox.

You should try not to ride with your horse into a fight. Use healing spells to heal it. Press the ALT-key when you are on your horse to make it run faster.

If you find it too troublesome then know that there are mods which make horses faster, add unique horses to the game and can make horses immortal. Sorry, I forgot you were playing on an ebox... No mods there.

There are stables where you can buy horses in 5 of the 9 hold capitals. I don't want to list them because that might be considered spoilerish. As to keeping them alive, don't ride off of steep ledges, if you see an enemy coming try to dismount and attack before they get to your horse. If you don't see an enemy coming, use the sprint key to ride away from trouble, once you get some clearance you can dismount and attack - or just keep riding, whichever you prefer. When your horse attacks a dragon or frost troll, cross your fingers and hope. I find the horses are fun, but they can be too brave for their own good. If you wait long enough, the stable keepers will restock when your favorite horse gets turned into Dragonborn Stew.

Spoiler
There's a Dark Brotherhood quest that gives you Shadowmere, a Daedric(?) horse that's nigh on immortal (lore-wise, she is immortal). She is, however, very aggressive and somewhat glitchy (she'll attack NPC's that you would think are neutral). You also need to be a good way's through the DB questline, but still, demon-horse.
