So the latest problem I've encountered is my character keeps turning into a vampire for no reason. He doesn't have the disease. I believe I had it at one point but cured it with a potion.

I keep having to reset it with the console but it happens again soon after. It's really damn annoying, I'm lucky to go half an hour without it happening at least once. It's not because of any vampire mods, I have one so I disabled it but it it still kept happening.

Has anyone else had this? Could be some bad side effect somehow of a totally unrelated mod?

Disable all mods, then see if it still happens. If it stops, it is a mod... simple.
