I keep all the drugs I find and any items I can use to repair my other items (Jury Rigging).

I found http://fallout.wikia.com/wiki/Fallout:_New_Vegas_crafting on the Fallout Wiki VERY helpful. Scroll down to the bottom of the page for the shopping lists. :)

Vendors don't resell (i.e. svck away) what you sell to them now, I guess YCS gauss would be the only thing that you don't want to buy it back.....

Wrenches, duct tape, scrap electronics, wonder glue & scrap metal. - For the weapon repair kit. Best crafting item in the game IMO.

No problem. :) I know what you mean about the Wiki, I love it but sometimes unless you know the name of the page you want you can end up with 200+ results and the page you want is buried amongst a load of stuff on page 4 of the search results. I stumbled across that one by accident the other day while looking for something else and bookmarked it :D

I had the same problem - knowing what to save and what to sell, until I got the Inventory Sorter mod. It puts a prefix on each item (PART, FOOD, ALCH, CHEM, CURR, etc) so that you can find stuff in your inventory since things are grouped by type alphabetically. Now, when I open a box, it tells me what to take and what to leave behind. (ie PART:Sensor module - good, Pilot light - not good) It feels slightly like cheating but once I learned what items are good, I could delete the mod.

Oooh thanks for that, I'll go and have a look for it, that's going to make it even easier than looking at the Wiki

I do the same thing with drugs except I sell them to the doc in the Mormon Fort. That's because I know they won't use them. I also throw all the strange meat, strange meat pies, and human flesh in a dumpster outside of Novac. The only thing that should be made from people is soylent green.

Just go read freaking recipes. http://fallout.wikia.com/wiki/List_of_Recipes_%28Fallout:_New_Vegas%29

You want to keep everything that makes decent food, improves drugs, heals limbs, fixes weapons. Also learn what you need to repair your stuff, with Jury Rigging it's way easier, Metal Armor fixes Power Armor, Raider Armor fixes Combat Armor, all rifles can be fixed between each other too. Also keep everything that weights 0 or close to 0 but is an ingredient or has value.

In general only sell cigarettes, armors and weapons you don't need for fixing stuff, rest dump in Novac in case it's needed one day. :-) Excess ammo can be broken up and later converted into what you need.

This, with extra scrap metal for the reloading bench. The stuff to make "Doctor's Bags" is also a good idea to collect if playing on hardcoe.
