I killed the Stormcloaks way too early?

When i started playing this game i joined the legion early on and defeated the stormcloaks, i am now at level 34 and i feel like if i hadnt of joined the legion early i wouldnt of missed things,

I have become the arch mage of winterhold, thain in almost every hold, leader of the dark brother hood, and i fee like i dont want to start again with another character as i feel all the hours i played have been wasted.

Have i missed loads of things that are really fun? (due to killing stormcloaks)? or is there still much more to do with this character?

If you're asking about actual consequences of completing the Civil War, there aren't really much. Imperial guards and soldiers guard the cities and the Jarls of then-Stormcloak holds are changed. Nothing much else, so you didn't screw up anything in the game.
I think you should continue with your character until you really get bored of him/her. Explore around, see if you have anything else to do, if anything, make a completely new character and try the quest lines you haven't done. Have fun and good luck!

Start another and do different things. That's what you do with RPGs. I can't for the life of me understand why people try to do everything with one character.

To each his own, I guess. As long as you are enjoying yourself. That is the main thing. So it is NEVER time wasted.

You may have missed some interaction with NPCs(jarls mostly) that sided with the Stormcloaks, but on the whole not a lot.

go to High Hrothgar before talking to Ulfric about Shouting, Dragonborn and the Graybeards. This is understandably very easy to miss though, since I have never seen the converstion options outside the periode between being summoned by the Graybeads and starting to train with them.

I don't know if it was my imagination but I found the civil war quests to be amongst the easiest. It feels like they're designed to be done at an early level. Regular guards seem way tougher at later levels than the ones you fight when capturing holds for example.

100% completion character is always my first character in ES games. Let's me familiarize myself with how things work and what I can do. No holds barred, get everything done.

Then I make real RP characters.... Who unlike the first character aren't truly legendary or worthy of highest accolades.

I have a level 67 Warrior Nord who is:

Harbinger of the Champions
Arch Mage of the Collage of Winterhold
Listener of the Dark Brotherhood
Master of the Thieves Guild
Champion of all the Dadric Princes
Hero of the People
Officer of the Stormcloaks
Destroyer of Alduin
Thane of every Hold

I have personally killed over 100 dragons.
Discovered over 300 places and cleared most of them.
Purchased 5 homes and have four more places I can use at my discretion.

And I don’t feel like I've done everything yet.

I haven't completed the Civil War quests, but I have to ask: at the end, do you kill either Ulfric or Tullius? I ask because, during the main quest, they become involved in one of the quests. So if you kill one of them beforehand, does that screw up the main quest?

At the end of a Civil War quest-line the heads of the opposing factions will die, so that i a yes. If this is the case the quest you refer to will skip that stage.

That's the way I use to think. I said I don't understand why people do it, but in reality I do. I done that with Oblivion, five years ago. After that first character I spent the next several years trying to come up with new and creative ways to replay the game. I planned on playing Skyrim with many characters anyway. I told myself I would not make that same mistake again.

I have so far spent over 1000 hrs on 6 different characters. Averaging 50 levels between them. There is still 50% of the map I have yet to explore. I have not progressed the MQ past meeting the Greybeards.

Yes, I'd say so. As of now, it comes to about 16 cents per hr. That is truly a cheep date.

^Yup..... Made the mistake of always doing the class guild quest before civil war..... so the 2 times I tried it (once VERY late in level, the other right after companions) it was waaaaaay to easy

I was hoping for civil war battles like http://www.youtube.com/watch?feature=player_embedded&v=M2DshotexMU, but my computer couldn't have handled it anyhow. I think the civil war is one of the few things I haven't seen all the way through yet in the game, aside from the dark brotherhood. Maybe I should take my newest character up to Solitude and sign up.
