I've played some good characters (Nord, Altmer Bosmer & Redguard) a badass Dunmer and a vengeful but good-ish Imperial. But for my latest character I thought I'd go all evil...unspeakably evil.

I'd say you should spare the Bard's college so they can still burn an effigy of King Olaf every month. Relieves you of a bit of responsibility for random destruction, you know.

Spare Heimskr so he can annoy all the rest of the essential NPCs in Whiterun
