Skyrim just doesnt have the replayability of previous games due to its shallowness.
Sure, you can take a different side in the civil war, but the quests and dialogue are copy/pasted and the same.
There isnt much you can do with the world, you cant become hated by one faction because you joined another, there is no fame or infamy, no NPC disposition no spellmaking to toy around with.
You cant decide to reshape the world as you would like it, leaving only stormcloaks, Imperials or whatever, because there are too many NPC's essential for no reason.
There really isnt much new lore, about 80 or 90% of all books are from previous games and the writing in the new games has suffered hard. Where before we got gems such as http://www.uesp.net/wiki/Lore:Bone, now we get meh-ness such as http://www.uesp.net/wiki/Lore:Guide_to_Better_Thieving, which does little more than explain game mechanics. (A noted exception is http://www.uesp.net/wiki/Lore:Songs_of_the_Return, which is amazing.)
The long and short of it is that once you have seen the sights and played the quests once, the game gets stale.
This is because most everything that gave it depth and replayability has been gutted.
Its sad, but Skyrim is a very beautiful game with content that is nice to play exactly once. After that, youve been there, done that.
