2 reasons
1) for kicks giggles and fun
2) it is awesome when you manage to do something like http://www.youtube.com/watch?v=tnLVooVE7Hs (yes I know knifing will be harder than that in Brink)

jeez, melee-ing in bc2 is even easier than in mw2 :facepalm:
i like the headbutt melee a lot better, or if you necessarily want a knife, it should be a weapon option like in battlefield 2

No its not, you can knife people from down the street in MW2, the reason that the guy in the video did so well is he snuck up behind most of them and most people don't use the knife in BC2.

Headbutt is kinda dumb,

That was a trailer trust me plenty that appeared isn't actually in the game.

aslong as the knife is not 1 hit i'm so happy. This is how happy i will be =D
