Maybe you sold it? Anyways check if the merchant in the Hagar settlement still has it for sale.

Same thing happened to me; dont use the quick switch menu. Instead use the number keys.
1 = Fists
2 = Pistol
3 = Assault Rifle
4 = Shotgun
5 = Crossbow
6 = Sniper rifle
7 = Machine gun
8 = Rocket launcher
9 = Pulse cannon
1 = Fists
2 = Pistol

Thats all good assuming you're PC.
If playing on a console, try getting the menu up (Back for 360, no idea PS3) and going along to the 4th tab. This shows you all of your weapons. Keep pressing down untill you find it. Once you find it you can press a on 360, or on PS3 I'm guessing it would be X but not sure, and it will let you assign it to one of the four little squares for quick-use.
