Models you would like to see

I'd like to see more varieties of weapons and armor, preferably based on historical sources. Single handed warhammers and chainmail, especially.

If you're still looking for stuff to do, some misc items/objects as modder resources would be nice.

How about...

Statuettes (like Dibella's just other deities/persons)
A ship in a bottle
Painting equipment (easel, palette, picture frames)
A loom

Since you're looking for ideas, I think more flexible building meshes would be fantastic!
For example, if you ever load up the solitude meshes in nifscope the backs are usually missing!
I'm aware they did this because we never really see them, but it does kind of make things a little harder for us modders, and I think a resource of 'full' buildings would be highly appreciated!
Oh this, this, this, this, this, this!

I hate it when they custom tailor things for the vanilla game only and limit modders even though finishing those meshes wouldn't have been very difficult for them.

And personally I'd also love to see some nicer upper class clothing like the Shivering Isles dresses but I know this may be a tall order ^^

Perhaps merging assets from robes and light/heavy armors to make some nice battlemage/cleric-type armors.

backpacks, specially "rough" ones. that looks like a sack slung over the shoulder.

- Like a wolf with a large mane like the one's that mountain lions have/

Mountain lions don't have manes (http://en.wikipedia.org/wiki/Cougar). And why would you want a wolf with a mane in the first place?

I second this (it's a must):
backpacks, specially "rough" ones. that looks like a sack slung over the shoulder.

Make my character look like Sean Connery. I'd pay for that.

Animal companion models that could be retextured with stitched photos of an actual pet.

Any of the Good ole Daedra that weren't included in Skyrim: Xvilai, Daedroth, Scamp, Spider Daedra, Clanfear, Hunger, Winged Twilights.
They would be useful as a modders resource.
