Not Happy With Skyrim - To Forced and Hand-Held

So recently I haven't had any problems with Skyrim until I created my thief/assassin character who Is a master alchemist. I just completed the White Phial quest and I am VERY disappointed.. To continue on to part two of the quest where you fix it you have to be able to access the throat of the world... So your telling me I have to become dragonborn and spend 15 hours to access the TOTW just to get the next quest. Also Bethesda didn't full-fill Radient Story to where if you kill someone, another person takes there place. About 90% of Skyrim is invincible, FOR WHAT? I can see certain people being invincible but common, everywhere I go I cant kill a single person. I loved how in Morrowind and in Oblivion they would give you directions, but In Skyrim they say find this, and leave you at that. It completely screws up the game. Also, You level up way to fast and everytime I sneak kill someone my Sneak Skill raises one level, also Sneak is overpowered.... Bethesda needs a patch to balance the whole game........................

In the title you say that the game is to hand-held, and then you say that you loved how you got directions in Morrowind and Oblivion while you don't in Skyrim? I don't understand.

After reaching lvl 32 I think the game is almost perfect, and I haven't found anything, I consider unbalanced, but the two things I don't like is the UI and how handheld you are when it comes to the quests, with the compas and questmarkers (the challenges from Morrowind in finding a secret mine are gone)

In Morrowind, the journal gave a description on where to go for a quest instead of just an arrow pointing you in the direction, it gave me a greater sense of achievement when I found a cave or daedric shrine.

yeah these quests reall get in the way of roleplaying like how the civil war quest needs the main quest to continue it and how many quests are linear with only one way to do it like I quest where you go sneak in there and get something but I'm a nord barbarian in heavy armor who hates sneaking

They give you directions so you can find it on your own, while In skyrim they don't tell you where to go and show you where it is, The quests are still hand-holding and offer very little options.
How do you play it on a psp?
Xbox 360 for me, might go PC after more mods come out,
