I remember one of the first posts I saw when I joined up a year ago just after the game was announced was something along the lines of "Its stupid how we just run into Minotaur's every other step, we need less monsters!"

I would still agree with him. There is no need to have to fight a monster every 20 steps, especially the same variety of monsters. In Skyrim, nobody is complaining about how
often they are fighting monsters, Its the
diversity of monsters to fight that is an issue with some.
But in my opinion, there is plenty of enemies to fight off.... Its the hundreds of hours we put into this game that brings the repetition.
There is assortments of dragons, bears, wolves, trolls, and sabre cats, spiders, spriggans, wisps, atronachs, skeevers/mudcrabs, giants/mammoths, and now werewolves in the wild. In forts/caves/dungeons, there's bandits, forsworn, falmer, draugr, skeletons, falmer, dragon priests, dwarven spiders/centurions/spheres, hagravens, and vampires. So the variety is there, but when coupled with the hundreds of hours of gameplay, it dwindles down the excitement of encounters.
I think creatures need more variety in how they attack and defend. Have some animals jump and run much faster, and block, or have special magic to counter your attacks.... Generally, most of the enemies just run at you, and/or stand there and use distant attacks.
