I created a character which didn't use ench or smithing until I'd hit level 55. Plenty of good stuff around.

500 hours? You're going to get rickets.

There are plenty of good stuff in the game that does not rely on Smithing and Enchanting. Ask almost anyone here, power levelling smithing and enchanting can, and usually does, make the game far too easy. I found the game made so easy when I levelled Smithing up to 100 as I had the best possible armour at a low level. I was going around in full Legendary Daedric Armour when my enemies were wearing Steel armour.
