Is It possible to set your starting point?

I am just wondering if you can skip all the beginning stuff and start wherever you want in Skyrim?

No, you cannot. You start where you start, and hear the beginning dialog, because it is important for the entire story Skyrim. After you leave Helgen, you are free to then do whatever you like. But you must start on the wagon, being transported to your death, with Ulfric. There are no other starting options. :)

I know, I got a work injury about the time Skyrim came out so I was unable to work or do physical things so I just gamed out for 4 weeks and beat the main storyline and the Companions....

There is much more than the main quest and the Companions. I've done everything but the civil war and main quest and have put in over 140 hours. Plenty to do, if you choose to do everything. :)

Doesn't take very long, intro wise, typically just watch tv and wait a bit.

Though use a perk calculator ahead of time if you want to get less pissed off at the game. Also helps to know which perks are good and which are worthless.

This is why my #001 save file is immediately before making your character. So I won't have to sit on that damn wagon and listen to idle pvssyr again and again.

You might, because in Oblivion there was a successful mod that started you off in a home where you pick your race, job, and extra details about your character. It might be possible in the late future someone will create the same kind of modification for Skyrim, but I wouldn't hold my breath.
