From what I've seen Dead Space definitely has a different play style.

The Fallout games have somewhat babied me. x3 I'm used to a little compass always pointing me in the right direction, health and weapons on tap, being able to stop and look around, be absolutely sure that an area is safe once explored. But Dead Space is a press forward kind of game. You run around blind unless you use the map, health and weapons are limited, you can not stop to look around and you definitely can't run around thinking you're safe in a room.
At least, that's what a few videos are teaching me.

Looks like fun, I just might get it!

You can activate a compass via one of the buttons during gameplay and it will send a light along the floor in the direction of your objective. You health is visible by the blue light on Isaac's spine, changing weapon can be done by shortcuts on the D-pad of an Xbox, I think med packs can be used like that too (Never tried). So you could still have all the quick go to thinkgs like in Fallout, just not with the world freezing pipboy, Dead Space has its own holographic "Pip-Boy" but this doesn't freeze gameplay which IMO keeps the game scary and on edge since you can be attack while changing your Inventory.
Granted it is kind of linear but there are defiently points where you can. Stop. Look. Scavenge. RUN!! Really though once you have killed the enemies in certain sections you should be able to just wander around, place do have time limits/undying enemies so staying still isn't an option for long, part of the horror aspect I'd say. Ammo and health are limited IF you play on harder difficulties, playing on easy gives you an abundance of items and there is always the shops to buy gear from.
Don't be fooled into thinking that if you run into a room the enemy will stay on the other side of the door though. They are smart.
I loved the setting for Bioshock, I just might get it again. I am definitely going to get Infinite when it comes out, that's for sure!
Should try BioShock 2 if you haven't already, I loved these games so much and the original is the reason I got an Xbox in the first place, Rusted copper tin box with barnicles
