Out of things to do?

well i first played 3 different chars, doing the fitting guildquests for them
and just now started my mainchar, who will try to do everything

i'm 100% certain that you didn't clear every dungeon/cave, or did every sidequest

and then you can always make a new char, giving yourself a set of limitations beforehand to make the game more enjoyable
for my current char, i limited myself to the following:

not increasing my crafting skills above my weapon skills
not useing anything that speeds up skill lvling
only useing a total of 3 dmg enchants on my equip, and not useing any + skill pots/equip above +30
with the magic smithing perk, i allowed myself to increase the improvement by double on artefacts and anything that has no perk for it
no dragonrend usage

playing on master, this made the game overall more challenging and fun for me

Wow, I didn't realize I had rushed so much. I guess Dark Souls made me a super-gamer? _ _

I am not at that point, but I can see what it would be like.

did you do all the MISC in your guide?

I just did all mine except for 2 (down to 2 misc quests and 4 broken ones that should be gone)

I am going back to various towns and talking to everyone I can. I am also snooping around alot, looking for cool stuff hidden (either lore or plot or good magic items)

if you have not maxed out enchanting/smithing/alchemy you might fool around with those.

the problem is this, if I am not mistaken

1) you have no major quests to do.
2) you probably own houses but are still rich and have no need to steal anymore.
3) you probably have pretty good gear.

if you are having tough fights still, you can always try to find and make better gear.
but if you have raised difficulty and still have good enough gear.....you might need to make a new character.

there will come a point where the game gets boring. then you quit, go read (i love sci fi horror) etc. play a different game. I got bored with fallout NV and then played borderlands for a few weeks and then came back and loved it again.
