They burn me to a crisp with one attack and I'm a spellsword with 1-handed Daedric Sword & a restoration spell in the other hand named "Fast Healing", I don't even get a chance to use Dragonrend! I just run, currently level 28.
I never saw a single one until I hit level 50 myself, and by then it didn't even matter what I used to kill it. Their fire/ice breath was dangerous to a degree, but only took off about half my hp. Mostly I just circled to the side of them forcing them to hit me with their wings and my dragonscale armor could absorb most of that damage. The first thing I did when I saw them was dragonrend to yank them from the air. Then popped a potion to fix the damage from their initial breath attack, and started circling while cutting them up and occasionally reapplying dragonrend so they couldn't leave me healing as needed. They are very predictable once you get them to land in my experience.

Which creature gives you trouble the most, besides dragons and dragon priests?

I gotta go with Chaurus Reapers.
Chaurus for me also, but I've made it relatively easy to take them out with sneak and a bow.

Dragon priests are the only enemies that gave me problems at the beginning of the game but the more you level the more easier it gets to fight them because those firebolt staffs take your hp down fast

Giants become easy after level 25 when there's only 1 attacking you and not 2+. Mammoths & Frost Trolls become very easy after level 20.
Depending on the skills leveled up to achieve level 20 and 25.

Forum Trolls. You put one down and two more pop up, and before long you're completely overrun.

More seriously, Bandit Chiefs at low levels. Then again I tend to play sneaky characters, so early on I haven't much in the way of either armor or HP with which to ablate their 2H sword strikes.

Nothing, really. Ice Wraiths and Chaurus were a little bit of trouble at lower levels, but now I just obliterate anything that gets within a foot of me. Mages would be a pain, but I have plenty of Health, and some nice Resist Magic enchantments.

Nothing. When you can sneak up behind any enemy with an exquisite daedric dagger and do 15x damage in one hit, you never have an enemy that is truly dangerous...
well if you truly go for sneak assassin type and perks, your dagger sneak attacks will be 30x or better - pure profit

Frost Trolls in a closed area svck, but the thing I hate most is Forsworn mages. I've gotten into the habit of Shouting them off the nearest cliff I can find just so I don't have to fight them.

For me, it was Giants, Mammoths at start. Then i realized that i should avoid to being hit and move fast+much in fight. Well, in almost all type meele fight you wouldnt just standing still, so its realistic.

At lvl 39 on expert, they are not a problem. At lvl 39, with 92dmg great sword, 380 light armor, was nothing a problem. Thats bad because if i start new char, ill die much again because i will forget that i should move in fight.
I had a great duel with a friendly npc. I had bounty on me so got a bug, where some friendly npc will attack me. The fight was decent, When i tried to power attack her, she bashed me, then attacked, blocked my normal attack etc. I missing the selfhealing NPCs. If she would heal herself, the fight would last longer :)
(The timeslowing effect when you block a powerattack, is bad thing imo. made the game much much easier for me)

Edit: Ohh i forgot... mages are still a problem for me
