I use combinations of daggers, swords, Bound Swords, and Illusion spells with my Dunmer Mage-Assassin. If I'm trying to be stealthy, I'll put a dagger in the right hand and either a sword or a Calm spell in the other. That way, I can either finish them quick with the sword if they don't die or they discover me or Calm them and try again while their mesmerized. With the dagger in the right hand, I can also perform those cool assassination kills too.
In a straight up fight vs 1 enemy or a dragon in melee, I'll conjure two bound swords and wade into battle, I may use an enchanted weapon if it's weak to that enchantment as well but I prefer to use Bound Blades for RP (If there were bound daggers I'd hardly even use normal weapons).
In a group fight, I'll keep Frenzy or Fear spells in the left hand and either a dagger or my Bound Blade in the right depending on whether I can get up there to sneak attack unnoticed. If I do get noticed (and I've likely buffed with an Alteration shield spell before a group fight like this), I'll switch to dual-Bound Blades and then switch to Calm or Fear if I get too injured and need some time to recover.
