This game isn't an economic simulation. They decided as part of the core design not to deal with any real economic issues. Everything this faked... production, comsuption, commerce.... there's just the illusion of actual worth. So, suspend your disbelief and play... or find another game which focuses more on the economy. I wish it were better, but the current model is actually better than something that trys to be something it isn't.
I actually think the money thing is a reasonable criticism. Although I don't think it's bad enough in Skyrim to be a big deal it can be. In so many games accumulating wealth is a big part of the game and the joy you get from it. If there isn't "things" or upgrades to purchase it all becomes empty (again I don't think it's at this criticle level in Skyrim. But that's just me).
Example, Red Dead Redemption, in my opinion, was a better overall western game than "Gun". However, there were not enough things, weapons or upgrades to purchase with your gold in RDD while in Gun, you were purchasing upgrades (like faster reloaders, more slots for Dynamite etc) right up until the end game. Even though RDD was stronger in just about every other category, this glaring flaw broke the game (for me) to where it had no replayability. I was like, why am I hunting and skinning these pelts? Gun was more replayable for me largely because of the joy of upgrades.
Now in an RPG, you still have the joy of leveling up so it's not as critical. Personally I think some are being too nit picky with Skyrim but I still think the subject in general, a game that allows you to earn money but doesn't give you a enough things to LOOK FORWARD TO in terms of using said earnings, is a legitimate issue in games.
It's not necessarily as simple as "go play an economic game".
