One handed or two?

1h: I don't recommend dual-wielding. The only thing special about it is the cute little spin attack it does.
I do. Especially compared to weapon-and-shield. What would you rather do - absorb your opponent's attacks with your shield while killing them slowly, or tear them apart with a flurry of attacks?

I haven't tried 2-handed, for the simple reason that I initially decided on the increased versatility of 1-handed. Having tried weapon-and-shield, weapon-and-spell, and dual-wielding, I much prefer the last option. Weapon-and-shield is too slow, especially when faced by multiple enemies (although I can see it being useful against bosses). Weapon-and-spell is useful against small numbers of low-level opponents (e.g. wolves) or enemies that are weak to a particular element, but dual-wield tends to carve through waves of enemies with ease. You just have to watch your stamina, and keep it topped up.

I got perks in both 1H and 2H but I only get the main perks from the main tree. I don't bother the 'Axe', 'Sword', etc trees.

I also used perks from Duel-Wielding tree in the 1H skill because duel-wielding is very powerful with the perks.

But overall, I prefer 2H so I only have one weapon faved.
