That's actually an interesting idea. I was wondering how to make an Alchemy-focused class, sort of like the Pathfinder Alchemist. Never thought of using Conjuration/necromancy, but it does seem to fit. I would probably go...
Breton (Conjuration bonus and Speech bonus for RP, plus their absorb ability and resist)
Stone could be whatever, I guess. Maybe Atronach... but does the Atronach bug apply to raising dead through Conjuration, or only to summoning atronachs? The Serpent would also be fun, but situational. Oh, the Ritual - that could work too.
For skills:
Alchemy
Speech - mostly for RP; he's a wandering snake-oil salesman, except the stuff actually works. Also wants to be good at persuasion.
Sneak - for poisoning
Pickpocket - strictly for poisoning
Alteration - for shield spells, and because Transmute makes tremendous thematic sense for an alchemist. Perks are nice, too. Conjuration - undead focus
One-handed - dagger or sword; mostly as a poison delivery system once cover has been blown.
That's more skills than I usually like to focus on (and I might be tempted to find some way to fit in Illusion for some of the neat perks there, especially Silent Casting...), but could be fun.

Combat would consist of opening up with a pickpocketed poison and/or backstab; kill that enemy, then raise. Cast shield, poison blade, chug potion of fortify one-handed, and help your new zombie buddy as needed for the next one.
