Why I felt Skyrim too fast to level up..

It's the lack of major and minor skills. In the past, you could just not pick your most used skills as major/minor skills to help control leveling. In Skyrim, every skill counts towards the next level.

It may help to avoid any of the crafting skills.

What guardian stone did your character pick? The warrior, mage, thief and lover stones all speed up skill leveling as well.

I find it quite fast as well. Not for any particular reason, I just don't find it satisfying if I level up quickly. To slow it down try to use as few skills as possible. Be particularly careful when selling stuff. For example wait until you have several of the same items and sell them all at once, rather than one at a time.

You can also utilize followers more often during adventures. As our followers take their share in dealing with enemies, the workload is cut roughly in half. This means less of our skills/spells are being used, and the game ultimately levels up more slowly.
