Throat of The World turns into a giant Cheese mountain.
Instead of Dragons we have giant, flying, cheese-breathing roses.
The Main Quest warps and it all turns into the fact that Alduin got pranked by Sanguine and has an incredible appetite for cheese, thus the CheeseBorn is tasked with finding enough cheese to satisfy him.

So he is led to Cheese mountain by the Cheeseborn, fulfilling its appetite and banishing it to the Moon, which is actually made out of cheese all along. Alduin then spends the rest of his life, eating the moon slowly. This is why the moon has phases. Alduin eats it piece by piece until sanguine replenishes the stock.

My thought was that they'd paint the town - literally.

The morning sky would be an emerald green, the grass a lovely red, the trees made of flaming cheese, and the animals.......

Nothing, they are hardly more powerful then mortals when walking on Mundus without being summoned there.
