What's the point in daggers?

They are great with the backstabbing perk. It's great for assassins and thieves

While we're on the topic of the 30x multiplier has anyone tried to sneak kill a dragon with it assuming they weren't perched up on a cliff or something? Would it be a 1 hit kill do u think?

Yep

Sneak attack from an Iron dagger with level 1 One handed weapon does 120 damage with the x30 multiplier, more with a power attack.

A level 1 sneak attack with Legendary Daedric Dagger does 630 damage

There are also other reasons as well. For my mage it's wieght. I can enchant 4daggera, each with different spells for special purposes. Fear for crowd control, turn unread, soul capture. Since the are about 25% the weight of a sword I can carry several.

2.5 times the multiplying factor (at 15x normal) of swords (at only 6x)

Daggers are quite closely matched with swords; I got my smithing buffed to 150% plus the perks that give double (so either 250% or 300% increase in damage) and my dwarven dagger on display in Vlindrel Hall has only 13 points less base damage than dwarven swords on display in the same house. It adds up. I imagine Daedric daggers slaughter up some stuff
