EDIT - I made another new quest that uses globals values in the text prompt, but again, it's dumping the entire thing as a string.

I've already declared the global in the Text Display Globals box.

I had this exact same issue, what you have to do is go to your quest window (Where you see quest name, priority etc) and at the bottom-right of the window you will see "Text Display Globals". Right click there, select "New", and add the global variable there. It then should appear in your text perfectly

so, it turns out the hidden flaming hoop i was missing was just a caching issue. i had to load a much older save that had no history of the plugin. absolutely effing ridiculous. but at least this monkey gets to enjoy his peanut.
