I sort of find enchanting useless, because I level my two-handed allot so I get allot of damage on my equipment.
How about enchanting some "Increase Two Handed Damage" gear (can go on boots, gauntlets, ring, necklace)? That's what I run with. Depending on what I wear, I can kick out 300 base damage with my Ebony Greatsword. (Still a couple daggers away from making daedric weapons... doesn't seem a priority, really.)
Ended up throwing a 1 second "Soul Capture" enchant on the sword using a common soulgem. Now I carry two - one for when I have empty gems of all sizes / am hunting giants & mammoths, and a second one (unenchanted) for use the bulk of the time. By the time I can do double enchants, I'll have a metric buttload of filled soulgems...
