Yeah I suggested milk a while back and this was apparently a ridiculous idea. I'd like to see water and milk in the game though. Perhaps fruit juice as well such as juniper berry juice.

Place to put a staff out of combat. Disappearing staves are silly.

My thoughts exactly... They had a perfect set- up in oblivion, why ruin it?

More people wandering the wilds, only seeing one hunter after 200+ hours of playtime is odd, not to metion drunk people, escaped slaves, wandering missionaries and travelling merchants.

Some people have already stated this but I will reinforce them:

1. Water or other than alcoholic beverages in Skyrim
2. More varying people
3. Additional dialogue
4. Write in game notes (would roleplay well with a mage)
5. Camps and portable camps
6. More "jobs" and for each arch-type too... Chop wood for Warriors, thievery and assassinations (good ones), and maybe enchanting stuff for warriors swords that cannot cut butter
7. More and easier object placement things. (more collectable items too... bugs in the jars are brilliant)
8. More wild creatures.
9. Growing plants and nature magic ( I WANT A DANG DRUID DANG NABBIT). Like seeds and such.
10. Psonic powers!
11. Capes, dyes, jewelery adds to armors
And much more 8(... Man I hate my X box at this moment

A lot of these things that's been mentioned are actually available through mods, example there's a mod which allows you to use the inc and quills to make scrolls into spell books and then learn them. Camps, fishing, wildlife all there too.

Animal companions is probably something I'd like to have.
