What little things would you add to the game?

Yeah, really. I forgot about this, but I would dearly love a Skyrim hardcoe mode.
Water: You have to drink fresh water every 12 hours. Purchasing a waterskin would vastly increase this (like that trusty Vault 13 canteen you get in F:NV). Fail, and you lose stamina, then health. Death occurs in 3-4 days.
Food: You have to eat every 24 hours. Fail, and you lose stamina, then health. Death occurs in 10-15 days.
Sleep: You have to sleep every 24 hours. Fail, and you lose Magicka (loss of concentration). Insanity occurs in about a week.
Cold: Swimming in icy water depletes stamina in 30 seconds, then health in 120 more. Healing well reverse the effect.
Heat: You stand on a fire, you burn. And the effect is cumulative.

Non regenerating health and magicka, I just like the feeling of making it to the city at the end of a long hike feeling like I am on the verge of death, happy to find an oasis where I could finally rest up and prepare. I loved that aspect in FO3, and I wish they included something like that in Oblivion and Skyrim.

I'm someone who has 8 characters, with over 400 hours in the game.. I just added it all up damn. But I can not help the blades. Everytime I get to that point I'm just to pissed about it to go further. And I don't see why we can't adopt at least one of those kids. I get that the timeline for most playthroughs is not enough to have a child with your wife or husband. But why not have a little rug rat that you saved from what probably would be a es6 begger.

Also some people mentioned spears: Now that we have mounted combat... we need the spears!!!

Something nearly impossible, but I would add more consecuence of your acts on the sorrounding world.
You are the Thane of Winterhold, and you during your mission, opened lots of chests, then a guard just comes saying "hands off sneacky thief" ... IM YOUR THANE YOu...!!!!!

  • Be able to by a house in every hold's capital. I don't care if some places like Morthal or Winterhold would only had an old hovel to sell you, at least you'd be able to have a house there.
  • Guild presences in more than just one city. For some like the Companions and the College of Winterhold this might not be possible, but the Thieves Guild, DB and Bard's College could probably do it. (and while we're at it, give the Bard's College an actual quest line that merits them having multiple campuses, although this is probably more of a big thing)
  • Have my character actually look at people instead of just staring directly in front of themselves at all times.
  • Add more non-caravan Khajiit. I think J'zargo is the only one that actually has a permanent residence in the game.
There's other things that I'd like to see but they're more big issues than little ones.

The ability to:

This would allow you to properly arm guards against dragon attacks (not to mention provide them with sufficient knee protection), convince your follower that the ebony greatsword you gave them really is a more suitable weapon than their puny iron dagger, doll your spouse up in the finest threads money can buy and make a beggar's day by giving him a whopping 10000 smackaroos instead of the usual measly septim.
... interact more with horses. Add commands like 'go home' to make them return to the stable where they were bought, 'follow' to have them tag along behind you and 'store items' to unload some of that heavy gear you've picked up along your travels.
... rent a room at in an inn without being shown to it if you've already stayed the night there several times. A simple, "You know which way to go," should suffice after a while, no? The Dragonborn isn't that forgetful.

... request shipments of specific items from shopkeepers. Need 50 fire salts and don't have the patience to scour the globe for them? Just pay shipping and handling and you can pick them up from the alchemist's in two days. You could even throw in a few Radiant quests to spice it up, like coming in to pick up your order and being told that the caravan it was being transported in was sacked by bandits. You'd get the coordinates of the bandit's hideout and could head down there to wipe out the culprits and retrieve what's rightfully yours. Or maybe one of the guys transporting your goods got a little greedy and decided to swipe some of them, in which case you could hunt him down and intimidate/persuade/brawl him into giving you back your stuff.

Unique dragons(with different appearances and attacks)
Ability to mountain/tree climb
The ability to roll(standing up)
Wild horses that can be tamed
Troll skull helmet and armor
Customizable armor(primary and secondary armor)
Attributes
Customizable player home/fort.
