I make a few potions for my benefit (mostly kept for emergencies), but primarily I sell the things. Preferably the ones with multiple effects that include things like Regenerate Magicka, Regen Health, Invisibility, or Fortify Carry Weight. Once you know what does what, Alchemy is a source of virtually bottomless income: buy 500 septims worth of ingredients, and use them to make 10,000+ septims worth of potions. the chief rule I follow is that I won't combine positive and negative effects, because I think the potion valuation system is broken.
Smithing is almost as good, but harder at lower levels because the raw materials used to make stuff often cost you more than the finished product. I could make a character who doesn't smith, but I won't do without alchemy.
