You can have both Finesse and Light Touch; my last character did. What it does is add an extra 5% to your critical chance after all other modifiers are considered, instead of before, like Finesse. So, let's say you have a luck of 5, Finesse, Light Touch and nothing else affecting your critical chance. Your base critical chance is 10% (+5% for Light Touch). If you're using a .357 magnum, which has a crit multiplier of 1, your critical chance is 15%. Now, let's say you're using Ratslayer with a critical multiplier of x5. With this weapon you would have a critical chance of 55% (or 10%x5 + 5% for Light Touch).
I wouldn't say you screwed yourself over by picking it. With hardcoe mode, the -25% to enemy criticals can be helpful.
Also, I never had Tribal Wisdom or Adamantium Skeleton (and I play only hardcoe), but if I had to choose I would go with Adamantium Skeleton. There's plenty of food around that you don't need to eat bug corpses. Hell, most bugs have meat on them anyway. However, even being careful, I have managed to set off some mines. In fact, I would say that most of my crippled limbs came from mines or other traps I couldn't disarm in time.
