To truly test this you would need a mod with things like this.
1.The longer you go without food, starting after say, 1 in-game day, your attacks would slowly grow weaker with each passing day, and die at around 1 month.
2. food effect, with water. Except death at 3-4 days
3. Potions, food, and drink need limits. You can't drink 20 gallons of potion and not get sick, pass out, die or not be able to move.
4. Food effect with sleep, with no death, but more prone to disease over time as well.
5. No perks, leveling gains you no health, or magicka. you CAN gain stamina (it's like being more fit).
6. You are 2-3 hit kill for MOST things. MOST things are 2-3 hit kill for you, some exceptions, such as rats (can't 1h kill you) and heavily armored enemy's (you can't easily kill them). Critical hits will 1-2 hit kill.
7. Injury factor, sort of like fallout, broken legs, arms, ribs, worn out body, etc.
8. certain damage depending on were you hit or get hit, getting stabbed in the foot, would hurt. But not kill you, a mace to the face would though.
9. You can only be a human race (witch ever race is more like your nationality).
10. Lower skill in one-handed, two-handed, blocking, archery means sloppier attacks, extremely unsteady aim, and knock back when hit with your shield up, while a high level in these would be much better. (as if you were learning how to)

There are also many other factors that would come into play. What you describe does not test if you would actually survive. Just makes things difficult. I'm sure a decent mod will eventually come out with everything needed though. When it does, I'll give it a shot.
