I used to be a bored gamer like you, until I took a mod to my Data folder.
Now that that's out of the way... I share many of your criticisms, and I would have stopped playing myself by now if it wasn't for the awesome mod community. [censored] UI? Fixed. Broken Dual-Wielding hotkey setup? Fixed. Poor performance? Fixed. Heck, I even made playing a pure mage worth it with mods that change my Destruction tree, and another that makes spells scale with level. You have the PC version, so you can pretty much change every complaint you've currently listed here... and the construction kit isn't even out yet. Things will be even better when it comes out.
FoV: This can be tricky. Lots of people report that just the standard fedfaultfov in the Skyrimprefs.ini doesn't work, apparently you as well. This was taken from a thread on the Steam forums for Skyrim. Give it a try.
- Go to C:\Users\[USERNAME]\Documents\My Games\Skyrim
- Open SkyrimPrefs.ini, and search for [General] section
- Add fdefaultfov=XX at the end of the section. (where XX is the FOV value you want to change to). For example add fdefaultfov=90
- Open Skyrim.ini, and search for [Display] section
- Add fDefaultWorldFOV=XX (where XX is the FOV value you put in fdefaultfov)
- Add fDefault1stPersonFOV=xx.0000 (where XX is the FOV value you put in fdefaultfov)
UI: Download SkyUI from Skyrim Nexus. You want an interface that's better for PC? There you go. I also like to use IPHud to make the HUD smaller and more compact, and Catagorized Favorites Menu for a much better favorites menu.
Optimization: If your GPU is the limiting factor, than this might not do any good for you, but if it's your CPU get the latest version of Skyboost. Amazing performance increases in CPU limited areas. I'm running an almost constant 60FPS outside, 50+ when near a town, and even 40+ in some serious bad areas like Markarth. Amazing performance? No, but much better than without Skyboost.
Whether or not you want to go through the trouble of installing, and tweaking all this stuff to your liking, is your choice. I agree much of this Bethesda should have done before the game's release, obviously they didn't, but the mods necessary to get it feeling more like a PC game are available. From my own experience, once you get some of Bethesda's biggest failures out of the way, you can really appreciate what they did do right, which is make one of the most content rich games I've ever played.
