My character has a personality, that I enjoy playing. With that comes interests and goals. I achieve those goals, whether it be slaying the Forsworn (Takes out his racism in a safe way =P), doing something with the Strongholds, and just adventuring.

Complete all guild quests
Achieve 100,000 legit gold
Aquire all special weapons
Collect things (Enchanted items, gems, ores, bars)
Wipe out your house then remodel it to your liking.

If that doesn't tickle your fancy, you could just try for all achievements :P

Hunt lots of elk.

I like this. Now to make it more challening:
-Only use the regular hunting bow
-Use iron or steel arrows
-Add a weak paralysis poison to your arrows
-Only use the first stage of these perks: Overdraw, Eagle Eye, Critical Shot, Hunter's Discipline, and Ranger.
-Do not use any other type of weapon

Pilgrmage. Wander the wilds, no fast travel, until you find one shrine to each of the nine, wearing a monk's robe. Maybe check the locations on a wiki first, or it will take forever. See what happens on the way.

Hunting.. Especially now you can do it on horseback. To make it a bit more authentic you could poision your arrows as well. Don hunter like gear and craft a new bow.
