In the opening cutscene, You can see your body from a birds eye view, The Courier was wearing a Caravaneer outfit, And a hat, I'm trying to recreate the outfit, So does anyone know what hat?

just get easy peats hat and you have a pretty good recreation of the outfit from the cut scene

i dont know where else you could find it. just drop a more powerful hat into his inventory, leave, come back, and now since he is wearing the more powerful hat steal the Cattlemen cowboy hat from him.

There's one in the Ultraluxe steam room. The outer round one, not the small inner one.

The outfit appears to be the grey version of the Caravaneer outfit, but I don't believe the gloves are available.

Was either a Rattan Cowboy Hat or a Cattleman Cowboy Hat ... can't remember which. You can find them scattered around the Wasteland and sometimes
