I'm at a point where I want to play my main (but not maxed out) character, but also dabble in some others. If you went all the way to 80, did you find quests were good and available still?
Would imposing my own cap at say, 50 or 60 mean there is more to do with the next character that was missed before?

Yeah, I don't impose any particular cap. I just play a character until it feels "done". Depending on the character, and my mood, that can be a pretty wide range of levels. I also don't generally try to do & find "everything" in Beth games - it's nice to have more things to find on other characters. (heck, even after several characters in Fallout 3 or Oblivion, I can still find new stuff.)
My first Skyrim character made it to around lv56. Only guilds done were Companions & Bards. Never quite visited all of the "major" cities, didn't see every map location, etc. Only got a couple skills to 100. Current char is in the low 40's, and is more just messing around.... a bit more morally loose, so has done Thieves & more of the Daedric quests.
