I'd suggest that, unless your character has a story that relates him to one of the factions, you could pass.
From a lore standpoint, maybe you could RP a Thalmor agent of some sort.

If you actually care about character motivation, then give him a backstory. His reaction to the civil war will emerge naturally.

By default, I can't imagine a typical Khajiit caring at all about either side; certainly not enough to agree to risk his life for them.

Depends on your background story. Mine will join the Imperials because her hubby gets killed by Stormcloaks, and is only in it to go on a killing rampage against the Stormies. She kinda loses it, you see.

they had a khajit wrestler in a game called tekken and his name was king

as for which side choose, ulfric is racist against all non nords and the empire doesnt allow khajit in cities so i would say stay neutral because neither side likes you
