I'd imagine the worst that could happen is that things kill you in one hit.

I don't know. You only "need" enough mana to get through a fight without running out and enough health to get through a fight without dying. How much health you need is up to how you play and at what difficulty. How much health do you typically end fights with? If you're near death then give yourself some more. If you're usually fine then do whatever you want.

If you plan on making your own gear and enchanting it, then I'm pretty sure you can get to the point where your spells don't even cost anything to cast. Worth thinking about when deciding how much to invest in mana.

You don't make clothing, but you can enchant any clothing you find. I've leveled a character that wears no armor and enchants clothing and while at low olevels it was sometimes tough, I'm level 45 right now and have no trouble. I put into health amd magicka about equally, no stamina. Now most of my spells don't cost anything to cast, so I put into health exclusively.

Just picture being chased down a long lonely path by a very large dragon spitting flames and boiling blood at you. Image trying to fast travel and being politely told no that cant happen whilst you're being baked to a fine crispy dust by said dragon. Estimate how far you are, from any safe building that you could cower in, whilst you are being chased by said dragon.
Then think again on those health points.

You need enough health to survive a dragon's fire\ice breath unless you invest in resistances.

They will eventualy find you in open space with no where to hide....

Depends on the difficulty level you play on.

If you have less than 300 health on master, you will get one shotted a lot, you won't be able to survive breath attacks by elder or ancient dragons or their melee attacks, and the spiky door traps will always kill you.

You should invest everything in health and completely ignore stamina and magicka.

Yes but you don't need to survive an ancient one as you get resistance potions, at high alchemy level you can make potions who give you 85% resistance, yes an melee atack will kill you but you can avoid that.

I have two characters who have never had an issue... ummm... without stacking health.

I say ummm because I drink a lot of potions and my boyfriend refers to them both as glass cannons. I'm great if I can keep my magicka up (I've only had one fight where the boss svcks my magicka and placed me in a really hard spot) and if I can keep them from being able to reach me.

This is another one of those things you have to assess for yourself. Are you the sort of player who can sneak through a dungeon without waking any of the draugr or are you gonna blunder in and hand to hand combat them all down? More health for the player who is gonna get hit and less health if you think you can keep them back and away or pop potions often enough.

It's also in how you gear them and what perks you've chosen for your character. These paper dolls of ours are very flexible and very capable of meeting or exceeding our expectations if we're good at knowing where our own strengths and weaknesses are in providing them support.

My lowest health character to beat all the chains she wanted was 100... the one who did it without a real lot of painful moments for the player had 130. Not a huge difference, when you look at it. The difference for mine was the one with the lower health was a mage and wore the archmage's robes, an enchanted circlet and light gauntlets and boots and the other one wore a full set of light armor with the armor bonus perks.

If your looking to exploit the 100% reduction, then I suggest not dumping points into magicka.

Health, however is always the most important.. invest as much as you could into them.

Stamina... ermmm... this one is kind of a hard decision to make.. First off, if your again looking to exploit the "absorb 1 stamina point on weapons and then power attack spam" then I suggest to not invest any.
If however, your looking to actually run away from battle or to haul massive loot... then invest into it.
