What fun things do you want added to the game?

I want catapults, explosives, and giant chickens and monsters
Also, an extended cooking list and campfires.

Portable tents to set up in the wilderness like rdr would be awesome too!

tents, house building, home decorating options.. I want to be able to kill a saber cat and haul it's head back and put it up on my wall. Same with dragons. After I absorb a dragon soul I want to be able to take it's skull and decorate my house with it. greater variety in weapon and armor crafting including jeweled weapons and crafting normal clothing.

Spellmaking on a grander scale would be pretty cool.

This- I do wish somehow we could get spellmaking back in the game. Fortify skill spells as well, do not have a clue why those got cut.

-Better difficulty including options to adjust amount of enemies in an encounter, encounter frequencies, enemy tactics, enemy scaling, and variety of encounters. I don't think one dungeon should "all be Draugr" or a fort all be "Bandits". Mixing enemies that require you to adjust tactics would be welcomed.

-Better Combat system that is more dynamic. More Active and Reactive abilities.

-Revised version of Spellmaking introduced. Can make custom Spells.

-Appearance Slots introduced along with Armor Dyeing, Clothing creation. Tons of new Appearance Only models introduced.

-Better Perk trees. Pick Primary, Major, Minor skills from start.

-Pick different starting locations and backstory.

-Factions introduced. Ability to wage war on other factions or create alliances.

-Be able to build a town and your own house and become the Jarl. Defend the city or take part in sieges.

-War campaign. Ability to flesh out the Stormcloak v Empire story complete with a whole campaign throwing you in large battles and missions.

-Alignment system introduced. Be able to be Truly Evil, Lawful or Neutral. Different paths open up including dialog options, quests, and endings.

When you 'pick up' an item it would be nice if you could rotate it so you could decorate your home. Its infuriating trying to line up my insects in jar and they keep falling over, eventually got 4 lined up and when I came home later on 2 had magically fallen on the floor.

Destruction damage scaling. Atronach perk not absorbing my own summons :-(

And a home/library with enough space for every single book to fit on.

I would also love for the arena to return as DLC, was the first thing I used to do in oblivion on most new save files. Gooooood people of skyrim! WELCOME! TO THE ARENAAAAAAA

Invite people to my house, have them sit down, offer them a rare ale or brandy and let them tell a story from the series. would be great if Bathesda could also add a few special animations/visuals during the story telling to bring it to life...like dreaming away/ taken over by the story. now that would be freaking awesome

It would be nice if there was someway that your horse and dog could be armored, or stuck in inventory. They are too weak for some battles and the dog runs off if you leave him home too long. It would be nice if your followers pvssyd a bit. There is just no personality there.
