It runs just fine for me. :) Just stay away from preview and beta AMD drivers IMO.

My 6970 runs fine using ultra on everything except shadows with a uGrids of 7 or 9, That includes the texture pack & 4xAA with 16xAF, The CPU is the deciding factor whether you can run shadows on ultra or not.

I pretty much get a solid limited 58 fps in all area's with the exception of some well know fps killer locations, Yes Markarth, I'm talking about you.

Runs perfectly fine for me. I don't check my FPS constantly so I can't say with 100% certainty that I'm at 60 FPS all the time, but I haven't noticed any lag spikes or performance issues since the days of 1.2. Even in Markarth. I do run the game in windowed mode, so I suppose that helps on that front. :P

Everything is set at Ultra except for shadows (set to Medium, because if they're going to look like crud no matter what then why waste the processing power--plus I do have a bit of an older CPU), with default ini settings less a few shadow tweaks. I'm also using a few retexture mods here and there, including some larger ones like Xenius' character enhancement suite, but not the HD DLC pack. You can see some of my screenshots http://steamcommunity.com/id/tyraarane/screenshots/?tab=&showdate=1&filter=app_72850 if you want to see what the game looks like with my settings.

When I used the 6970 (before I upgraded) it ran almost any game decently at 5760x1080. It maxed out any game at 1920x1080 for sure.

I have the same issue and that's why I don't use the AA (1920 x 1200). Even 2x gives me a huge drop in fps.

Skyrim doesnt natively support triple monitor gaming....and the problem is Bethesda doesnt seem to want to support it. Every time they patch it they break the community fixes.

http://widescreengamingforum.com/dr/elder-scrolls-v-skyrim/en

But in order to edit the game to display on 3 screens you need to go to My Documents>My Games>Skyrim>SkyrimPrefs then find
iSize H=1080
iSize W=1920

and change it to

iSize H=1080
iSize W=5760

But like I said the menus will be all messed up until either Bethesda or the community fixes it.

I have been just playing the game at 1920x1080 for now which is slightly annoying.
