Running through the star-lit plains surrounding Whiterun for the first time, probably. Also being kicked to the moon by a giant because I thought it was a mighty fine plan to do battle with one on my way to retrieve Nettlebane (which also had me die a dozen times or so).
What I like are the mods, I was upset that my companion couldn't ride horses, no problem. I found some awesome armor too that I can supposedly make. I would be at peace if only people could make one that allows me to fight while on horseback.
I would have to say the scenery. Sometimes I get really immersed (I chuckle at the 'immersion' crowd sometimes), but I come upon a particular setting and I'm like, "Omg HONEY COME HERE!" That first look can take your breath away before you realize you're sitting in your living room.
The amount of effort put into making a very realistic looking natural world from the beautiful rivers to the Mountains, including the flora and fauna. I could wander this virtual land for hours, and have.
They`ve certainly done their work with the world graphics, no doubt about that.
Dragon encounters.. The music/soul absorbing/etc.. The whole thing really. Just wished I had the epic dragon mod (I'm on 360). It's fun enough on master, but it should be drawn out a bit more.
The uninstall button was a nice feature jokes aside maybe the first dragon encounter. The billion dragon encounters after that lost the appeal for me,dragons were abused to often by the developers i thought..

I like the little things the NPCs do, like wiping a counter, or cooking, or sweeping, or whatever. It makes the world much more believable when the NPCs actually have a purpose instead of just standing in one spot or just wandering around aimlessly. That's definitely a big improvement over past games.
I also like the combat a lot more than ever before. I actually look forward to fights now instead of them getting repetetive and annoying after a while.
