And everytime I go there, there's nobody but the dude.
I searched everywhere but nope can't find that woman anywhere..

So I guess she took off with the free home meal cook and 100 gold everyday ?

You need an item called the Amulet of Mara. Some characters have prerequisites to marrying them, such as completing a quest they give you. As for benefits, they open a "stoore" that earns some gold, and they can cook meals for you. Look on the UESP wiki for more specific info, including a list of people you can marry and prerequisites for marraige.
