Who Has Attempted More RP Characters?

Hey, just wondering if anyone else has been re rolling characters of the same type after 20-30 levels. I try to stay a specific type of class but quickly end up veering off and become a godlike human at everything. Has anyone had any luck with going for a more RP oriented gameplay? I notice my big issue is every character so far I end up leveling both blacksmithing and enchanting as well as enchanting armor with blacksmith skills and wearing them every time I improve armor which gives me incredibly powerful armor early game. This pretty much ruins it for me, but oddly enough I make the same mistake every time.

Perhaps if I only choose one crafting skill (blacksmithing, enchanting, alchemy) it would be less game breaking. But, how does one level blacksmithing gradually and not end up making a million daggers? I can create armor that I would wear and constantly be upgrading it and improving, but that would not level it much. After every character so far I found myself with more gold than I could ever use and spending hours just managing bagspace. Has anyone just looted only rare or magical items instead? Maybe blacksmithing would be useful leveling up to make money in that aspect? I am simply just trying to find a way to play a character without making him incredibly strong early game but still achievable later on with a lot of work. (not talking about difficulty settings)

(TL;DR) What are your attempts and results at making more RP type characters focused on making that character feel more unique and not attempting to make the most powerful character possible.

i just remade my nord loyalist after the previous character had reached level 28. i did it because i had gotten sloppy in my rping, but, i also wanted to get more strict in my skill and perk choices.

previously, i have been choosing a couple skills to major in that i can max out, though, i couldn't have them be both 2-h and archery, for example. the archery would be a minor skill that i could level up to 50ish. however, someone made a great suggestion and i am now doing it with this new character: creating tiers that i must reach through training before i can actually use them. this works great for those skills that aren't major/minor, like, alchemy and lockpick.

for alchemy: i can eat an ingredient to learn the first effect. if i train to 25 i can use the first 2. 50=3. again, he's not an alchemist so i can only make them for my own use. (i will have to be careful not to make to many and over-level.)

lockpick: same thing- novice locks only, at 25 i can do apprentice and so on. i will use my printed map and make notes of unopened chests that i can come back to.

smithing: since it isn't my nord's vocation he will initially, at lower levels, only smith items that he wants to use. no smithing for cash. as a result, i won't be leveling up so quickly from accessory skills. pay for training and reaching predetermined levels will allow me to take perks and move up. and, remember that at higher levels you levelup much slower and that will coincide nicely with my slow, gradual skill increases.

so far, this has worked very well (though, i'm still refining it and open to more suggestions) and i'm rping much better.

Im currently playing a Spellsword using only 4 skills and minor of enchantment. Destruction, Heavy Armor, One Handed and Restoration. Im even avoiding some skill books that wont benefit me. The only thing i cant control is leveling in speech after selling stuff. No blocking, being restoration and heavy armor is my protection. Im joining the college of winterhold, legion, and possibly the companions, although it may be limited. My character is basically using the skills of a npc spellsword, being that i like the limitations.
