I have started running to places rather than using fast traveling.

I have been attacked by three Wood Elves while I have been running from place to place.

What have the Nords done for the Wood Elves to hate the Nords? (LOL or is it just something that I have done?)

Those are just random encounters. Its probably just a coincidence that you had 3 wood elves in a row. They are a mix of races, so you get a hostile Imperial, Khajiit, Dunmer, Bosmer, Altmer, Breton or Argonian.
The random Orc, Reguard and Nord are not automatically hostile but will call you a milk-drinker and then attack if you confront them.

I've been attacked by Redguards, Wood Elves, Dark Elves, Orcs. It's just the random encounter.

I feel your pain, I got attacked by four of those buggers in a row. At least the Khajiit had the manners to talk to me before he attacked me. I really liked that Khajiit, He was all like "Give me your gold!" And I was like, "No." Ah, good times.
