I don't know how unconventional it is, but I'm currently playing a Nord barbarian type who is deeply suspicious of anything to do with magic - to the extent that he refuses to even pick up magical gear to sell.
He also only uses armor and weapons he has crafted himself (with the exception of a set of fur armor he picked off a bandit early on). He specializes in 2-handed weapons, with archery as a strong back up skill, and there have been times I've had to pass up Orcish war hammers or enchanted bows which would be really nice - but nope, still sticking with his trusty superior steel greatsword!
The only exceptions to the above would be in the case of special artifacts that seem appropriate to the character. For example, he is wearing an Amulet of Kynareth right now, which boosts stamina & seems like a good fit as it's from "the gods" rather than something created by a crazy wizard - but that's the only thing that could be considered magical.
Potions are ok, as these are created through mundane means - but he doesn't make 'em himself.
As you might imagine, he hates magic-users and has a special distaste for witches (Nord frost resistance comes in very handy!) and necromancers.
It took me a few characters before I could get this focused with my roleplay - my first couple characters were basically running through the questlines and seeing what sorts of things you could do in Skyrim. This guy is avoiding major questlines (because they have a tendency to make me rush to "finish"), and doing smaller jobs like bandit bounties, chopping wood for a few septims, mining whenever he can, and getting steadily better at smithing.
I'm still only around level 7 or so, so we'll see if I start to fall behind at higher levels - but so far this is a blast, and I feel like I'm really exploring the game and playing on my own terms, rather than with my first 2 characters who played the quests (Thieves' & College of Winterhold, respectively).
As I said, the character type is certainly not unconventional, but the restrictions I'm placing on myself are a bit different from what I usually do.
