Depends which char. I'm RP'ing. With Hearthfire, I think I'm going to go back to my strictly "living in Skyrim and not really a hero" hunter/trader who lives in a tiny shack with very few amenities. My alchemist char. would obviously have the greenhouse and alchemy lab. and my Treasure Hunter would have as many display cases, etc. as possible and the trophy room. So my house will vary greatly depending on which of my chars. I'm playing at the time. As for adoption, I'll have to see if it fits right with my roleplaying, then grow the home accordingly. I don't know how much real added "game" value this will bring to the table, but for me, now I just roleplay a lot more and not worry so much about quests and I feel Hearthfire is adding more RP value for Skyrim. Just my opinion. I'd even pay smaller amounts for other DLC if they added things like a small tent I could pitch in the wilderness along with a campfire or added treehouses and even the ability for me to setup a shop in one of the marketplaces, hire a shopkeeper and keep the shop stocked up by hunting, crafting etc.
I know that's all free with mods but as an Xbox user, this is what's available to me right now. It's still cheaper and easier than getting a new PC and putting in the time to download and install mods. That being said, I will be doing that anyway, but not until the GOTY version comes out for PC. As it stands, Bethesda is not the only company to make money off of DLC on Xbox live and they won't be the last. I'm happy to pay for it if it means they will continue making Skyrim content and continue with the Elder Scrolls series. Those devs need to be paid as well and the team has certainly grown. In the end, the game continues to be a lot of fun for me to play.
EDIT: I suppose my hunter would also build a trophy room
