Aren't the Souls games technically WRPGs even though they were made in Japan (I could be completely wrong, just something I remember reading)?
Depends on who you ask. Folks like myself would say that a 'JRPG' isn't defined by any specific game mechanics, but rather the term simply covers RPGs made in Japan.
After all, early RPGs made by Japanese developers were heavily inspired by Western titles like Wizardry. One of the first RPGs that proved to be successful in Japan was http://en.wikipedia.org/wiki/The_Black_Onyx, made by Henk Rogers. Its success led many Japanese gamers to import the Wizardry and Ultima games and among the fans of these games was Yuji Horii, who went on to create the Dragon Quest series. Unlike the computer RPGs that inspired him, however, Dragon Quest featured more simplistic gameplay systems and an intuitive UI designed for consoles and a controller. Dragon Quest essentially created the console-style RPG genre which in turn influenced the NES ports of games like Ultima III and Wizardry (which released after Dragon Quest II).
So, trying to classify JRPGs and WRPGs based on gameplay systems hasn't made a whole lot of sense even from the very beginning, less you risk calling games like Ultima Japanese RPGs.

If you're dead set on classification through gameplay then computer RPG vs. console-style RPG makes much more sense, though even those lines have blurred in recent years as PC developers took to consoles and PC/console games have become homogenized.
