You could stream the gameplay, sure, but how would you control your character?
OnLive has iOS/Android compatible wireless controllers. It would be silly to play Skyrim on a tiny Android phone screen, but for something like an iPad it could work if the game was added to the OnLive service.
Which it won't be, but other games are. You could play Crysis 2 on max settings (on a compressed 720p stream with some input lag

) on an iPad if you have a decent internet connection available.
It's a very interesting service, technology wise. But it's a bit of a niche thing, I can't see myself using it.
