I love elves within most games, but the elves within Skyrim look weird and they all seem for the most part quite evil. The Altmer and Bosmer are both stereotyped as Thalmor supporters whilst the Dunmer, unless I am mistaken, worship Daedra. Bretons are quite cool. I love magic, but hated the elves in Skyrim, so they work for most of my more recent characters.
Understanding you've probably not played past games or read many lorebooks (I used to be of the attitude in Daggerfall, Morrowind and even most of my time in Oblivion that I was playing to play, not read poorly written short stories), many if not most elves do not support the Dominion; they are just the dominant political faction; And many if not most Dark Elves worship only the "good" Daedra (Daedra just being gods that didn't partake in creation, not inherently evil daemons), i.e. Azura, Boethiah, Nocturnal and Meridia, or follow the Imperial cult (worship of the eight/nine divines). Just fyi stuff, not really that important since you ought to play the game as you like.
Spoiler The female versions of the elves don't look as... messed up. Same goes for most races in Skyrim though.
My favourite is hard to say, either Dunmer or Khajiit, Imperials are growing on me now that they aren't the "slatted for useless merchant or bland warrior" class by default and are more "cutthroat mediterranean conquerors/paladins" with Egyptian, Roman and Greek influences. Khajiit and Dunmer have the best lore, and Dunmer architecture is neat. I'm saying Khajiit and Dunmer presuming by "humanoid" you mean "not goblins, hagravens or dragons."
